Gürsel Tonbul, who founded Kuşadası Değirmen Organic Farm and Değirmen Restaurant businesses in 1995, created the Yerlim Organik brand. Certified organic farming since 2000. Who is Gürsel Tonbul?

In 1974, Gürsel Tonbul graduated from Gazi Education Institute English Department and worked as an English teacher at Kuşadası (Aydin, Turkey) High School until 1980. She then took on an active role in family business in tourism and hotel management. She founded Kuşadası Değirmen Farm and Değirmen Restaurant in 1995 and created the Yerlim brand.

Gürsel Tonbul has been engaged in certified organic farming since 2000. It carries out the production of products with the Yerlim and the restaurant management together with the farm business, where a wide variety of production is carried out, including vegetable, fruit, olive and viticulture. Olive oil production, greenhouse cultivation, bovine and ovine breeding, museology constitute the other units of the business.

She is a board member and chairman of professional and social associations and NGOs.

Değirmen Park

Providing an eco-tourism-agriculture exemplary service, Değirmen Organic Farm was established in Kuşadası in 1995. In the same year, the Değirmen Restaurant was added to the part of the farm land on the main road, as a daily recreation & entertainment place. Over the years, the business has turned into a natural ecological park area with continuous renewal and additions.

In 1996, cattle breeding started in the farm, and in 1999 a medium-sized cattle dairy farming enterprise was established. In addition to cattle breeding, small ruminants and various poultry are bred to meet the needs of Değirmen Restaurant.

In 2011, the Oleatrium Olive and Olive Oil History Museum was opened within Değirmen Park. The museum was created to reflect the historical connection of olives with Anatolia and the Mediterranean and to leave a legacy to the future.

Located on a land of 2000 decares, organic fruit & vegetable varieties belonging to the Aegean Region such as grapes, peaches, plums, apricots, pomegranates, blackberries and citrus are grown, mostly olives. Having left 25 years behind in its amateur farm adventure, Değirmen has become one of the leading businesses in organic agriculture today. Değirmen Restaurant and Farm Enterprises, whose main idea is to create a daily recreation area and transformed into a miniature natural eco park, has now been reinforced with the brand YERLİM .

Today, Değirmen Restaurant and Farm Enterprises, which is spread over 150 decares of land and is open in summer and winter, continues to host its guests with different services that continue throughout the day and appeal to all segments.


Değirmen Farm Organic Agriculture

Değirmen grows many organic agricultural products obtained by the correct use of natural resources in the park. Among these are grapes for wine, mostly olives, vegetables and fruits belonging to the Aegean and Mediterranean Region. Here, products are produced in an agricultural production system based on environmental protection and food safety.

Listening to the sound of nature, Gürsel Tonbul voluntarily teaches farmers who want to turn to organic agriculture and practice organic agriculture. She contributes to the formation of environmental awareness by sharing her knowledge and experiences in organic agriculture at all the meetings she is invited to.

Yerlim Organic Products

We have a factory where we produce products to create added value for fresh fruits and vegetables that we grow in our farm. Only the women of the farm work in the factory, which has organic certification, production permission, and most importantly, traditional production methods. The brand of our products is YERLİM. Inspired by the enthusiasm of the Domestic (Local) Goods Week, which were highly valued in our childhood, we named our brand YERLIM. Its logo depicts the farmers dancing the post-harvest thank-you dance. The basic philosophy of the production in our factory is based on collecting ancient food production information passed on from previous generations, bringing it together with the physical conditions required by today's health rules, and collecting and sharing this knowledge for the next generations.

Olive and Olive Oil

The Tonbul Family, which gives special importance to the olive tree, established a museum called Oleatrium Olive and Olive Oil History Museum within the borders of the Değirmen. In the museum, there are objects and materials that shed light on the known periods of olive and olive oil history.

Değirmen Farm continue to convert the olives they grow according to the principles of organic agriculture into olive oil with traditional methods. In Değirmen Grocery, there are organic certified olive oils with the Yerlim brand, pickled olives, olive paste, olive oil soaps and sculptures and objects carved from olive wood.

In addition to all these, you can find organic breads cooked with traditional methods and many of your home's basic kitchen needs.

Değirmen Restaurant

Working with a chef staff that has never changed since the day it was opened, Değirmen Ala Carte Restaurant welcomes its guests with the understanding of service where quality and price complement each other. The restaurant, where mainly meat dishes and examples from Aegean cuisine are served, also features original classics of traditional Anatolian and Ottoman Istanbul Palace cuisine.

Many products used in the menus of Değirmen Restaurant come from Değirmen Organic Farm and YERLİM organic products. The flavors offered are not only certified and organic, but local and traditional products, adding a distinct flavor to the dishes. Adopting the sensitivity in organic farming for meat dishes, the enterprise prefers to raise cattle, ovine and various poultry animals fed in its natural environment.

Courtyard

While your children have fun in the playground, you can enjoy our homemade fresh and healthy food. The courtyard, located at the entrance of the Değirmen Park, welcomes its guests as the first service section. There are sourdough bread varieties that will meet the basic needs of your home, where YERLİM farm products are sold, baked in a grocery store and wood oven. You can also find organic certified fruits and vegetables produced by women using traditional home production methods and grown according to the season in the farm grocery store, which is always open in summer and winter.

The courtyard section, where you can find 100% organic fruit juices, homemade ravioli, pastry and cookies, serves in a pleasant atmosphere where you can relax under the gazebo while sipping your hot or cold drinks after a long walk.

Gölbaşı (Lake-side) breakfast house throughout the day

Located in the middle of the mill, Gölbaşı offers a peaceful and relaxing environment where you can watch the ducks and swans on the pond while sipping your drinks. You can have breakfast at Gölbaşı (Lake-side) all day long, or you can find flatbread and pancakes cooked on wood fire with organic fruit juices and greased with olive oil.

Animals on the Farm

Appealing to children as well as adults, Değirmen Park offers a unique opportunity for children to discover the animal world closely.

Providing children and animals to meet in a common area, Değirmen Park provides service in a fun and educational environment with Pony Kids Club. Here, children can enjoy a stroll with ponies named Aleksander, Barby and Kaar.

There are many animals in the farm, such as horses, camels, donkeys, cows, rabbits, turtles, swans, peacocks and ducks. In addition to seeing the animals up close, you can enjoy a ride with horses in the boarding area.


Oleatrium Olive and Olive Oil History Museum

All the objects exhibited in the museum are the result of Mr. Hasan Tonbul and Mrs. Gürsel Tonbul's efforts of more than 30 years, who have collected them with patience and care. In the museum, you will witness the story of the ways in which olive oil goes from the production stage until it reaches our table.

Adding value to the love of land and olives they received from their ancestors by adding their knowledge of history and geography, Mr. Hasan Tonbul and Mrs. Gürsel Tonbul has presented the Oleatrium Olive and Olive Oil History Museum to future generations.

Oleatrium, which is formed by combining the words olea (olive) and atrium (courtyard) in Latin, means olive courtyard. The project and construction of Oleatrium, which was created in order to reflect the connection of olive with the history of Anatolia and the Mediterranean and to leave a legacy to the future, started in May 2009. It was opened in May 2011 as "Oleatrium Exhibition Hall". In 2012, it received the status of Private Museum.

The information about in which areas and how olive oil was used throughout history is expressed in the sections where they belong, with visuals and objects. Olive oil was used as a fuel for illumination in oil lamps before being used for cooking. The Lighting section provides information about the purpose of this use of olive oil in general.

In addition to its use as an edible product, it was used by the Romans as a health, beauty, cleaning and care product. For this reason, unlike other museums, there is also a classical Roman Bath (which is orgin of Ottoman Bath "Hamam") animation in the Oleatrium.

In the exhibition in 10 halls of the museum, which consists of 11 halls in total; Technologies developed in olive oil production in historical order from ancient times to the present and different usage areas of olive oil; It is narrated in a narrative style with works and animations.

Olive and Olive Oil Museum of History today, is one of the most important museums in Turkey and examples shed light on the history of olive oil in the world.

1) Archaic Period: The first known system for extracting olive oil was unearthed in the ancient city of Klazomenai in Izmir's Urla district.
2) Cellar: There are amphoras of different forms belonging to the ancient period in the cellar, which is at the transition from the first hall to the second hall.
3) Transition Period: The earliest known oil extraction method from olive, known as foot oil, is exhibited.
4) Lighting: Olive oil was first used as fuel in oil lamps before it came to our tables for cooking.
5) Roman Period: The place of olive and olive oil in the history of the Romans and Rome ...
6) Roman Bath: Usage areas of olive oil in Rome (beauty, cleanliness, health, ...)
7) Early Byzantine Period: Developments in olive oil production in the Early Byzantine Period.
8) Collective Presentation: Presses / vices from different periods used in olive oil production and important technical details.
9) Late Byzantine Period: Olive oil production stages in the Late Byzantine and Early Ottoman Period.
10) Early Industrial Period: Using water heat power by converting it to steam power in the Early Industrial Period.
11) Electric Power Period: The workforce provided by steam engine or diesel engines has been replaced by the workforce supplied by electricity.
12) Winery: Zeytin's last point in her journey and her friendship with grapes.
